Couldn't We All Eat Better?

potpourriI have been a vegetarian my whole life. Although it is more-often-than-not healthier to be vegetarian than to have a meat-laden diet, I feel like I am always lacking essential nutrients. That is not good for a growing, young woman like me!

 

Lately, I have been trying to eat better in order to make sure my body is getting what it needs. I subscribed to Farm Fresh To You, which delivers fresh fruits and vegetables to my door. It's a ton of food, but it forces me to eat many more fruits and vegetables than before. Compounded with that, I am trying to eat in more. It's easy for me to double a recipe and freeze it for later, I have more control over the flavor and ingredients, and, of course, it's cheaper. Not to mention I love cooking! Between the motivation to cook for myself more and the fruits and veggies box, I have been exploring new veggies and new recipes - who ever said being vegetarian was boring?!

 

So here comes the question you are probably thinking in your head - why am I a vegetarian? I get asked that almost every single time I tell anyone that I don't eat meat. My parents were both raised vegetarian, and so were my siblings and I, because of their religion. I don't follow that religion any more, but meat always sounded so gross to me. In the last few months though, as I have been trying to eat healthier, I decided to try and venture out and eat meat. It's still pretty gross sometimes, but I have been starting with chicken and taking bites here and there. I haven't fully committed to eating meat full time, but I am going to try and find the healthiest balance eventually. But even though I want to eat as healthy as possible, there are still some things I won't do

 

I can't ever imagine myself preparing the meat. That's just too gross for this lifelong vegetarian!

OMG. So ever since I've been

OMG. So ever since I've been training for the marathon I've gone pretty healthy... like 90% of the meals I eat are healthy/really healthy and 10% are not so much/indulgences/fast food. I've been able to swing this by learning to cook meals at home - which like you mentioned saves so much money! And I'm ALWAYS looking for new healthy recipe to shake things up... any suggestions? Like what's your fave vege meal?

Wow, the concept of someone being a vegetarian for their entire life is kinda hard for me to wrap my head around. Obviously, you can guess I am not a vegetarian. I do work hard to eat a balanced meal, however, and make sure I keep up with my fruits and veggies. I myself don't really like cooking that much, which is another reason why I struggle to eat healthy. I do see how being brought up as a vegetarian would help you to maintain it when you got older. I can't imagine my life without a little meat here and there though...Great work!
