Zesty Asparagus Wrapped in Smoked Salmon

 

This appetizer is healthy, full of flavor, and creates a beautiful presentation.  It is also quick and easy to make and is a great do-ahead item, perfect for any gathering.

 

Serves 8-10

 

8oz Thinly Sliced Smoked Salmon

2 Bunches Asparagus (about 40 Spears)

1/4 cup Chopped Fresh Dill

1 Lemon (zested and juiced)

3 tbl Extra Virgin Olive Oil

Pinch of Kosher Salt 

Pinch of Freshly Ground Black Pepper

 

Chop the woody ends off the asparagus, about 2 inches from the bottom. Blanch the asparagus by placing it in 2 inches of boiling water for only 15 seconds. Cut the smoked salmon in half vertically and rub salmon with the fresh dill, salt, and pepper. Wrap the salmon slices around asparagus, 2-3 spears per bundle (depending on how big the spears are). Align the bundles on a platter, top with lemon zest* and drizzle with extra virgin olive oil.

  

*Lemon zest is the rind on the outside. To remove it you use a hand grater to scrape off the yellow bits (but don't grate the white part, it's too bitter). If you look in the picture it is the little bits of yellow on top, it gives off a fresh citrus taste and smell.
