Eating Deliciously Healthy is a 3 part content series that will showcase recipes from Kasey Bell to help show that being healthy can still make your mouth water.
A delicious weeknight dinner, this dish may look fancy and gourmet but it is actually very simple and easy to make! The rich flavors of the sun dried tomatoes, feta, and thick balsamic vinegar will make your mouth water while still maintaining a balanced low calorie meal.
Serves 4
4 6 oz Chicken Breasts
1 cup Fat Free Feta Cheese (divided into 4 parts)
1 cup Fresh Spinach Leaves (divided into 4 parts)
1/4 Chopped Sun Dried Tomatoes (divided into 4 parts)
6 tbl Balsamic Vinegar (thick and good quality)*
1 tbl Olive Oil
Kosher Salt and Pepper
Preheat Oven 350 degrees F. Butterfly chicken breast by carefully slicing the breast in half while leaving 1/2 in.-1 in. intact. Rub chicken breasts with salt and pepper and then stuff the pocket with fat free feta cheese, spinach leaves, sun dried tomatoes. Drizzle olive oil in a skillet over medium-high heat and brown outside of chicken breasts, about 5 minutes per side (be careful when turning the chicken so filling does not fall out). Transfer chicken to an oven safe dish and place in oven, continue to cook chicken for about 10 more minutes, or until no longer pink inside. After chicken is done cooking in the oven allow to cool, transfer for a plate and drizzle balsamic vinegar over the top and serve alongside an herb salad.
*Tip: If you don't have an expensive thick balsamic vinegar or don't want to buy it, you can simply take an everyday balsamic vinegar pour it into a small skillet or sauce pan over medium-high heat and reduce until the vinegar has a thick consistency good for drizzling.
