halibut recipeEating Deliciously Healthy is a 3 part content series that will showcase recipes from Kasey Bell to help show that being healthy can still make your mouth water.

 

This dish is great for entertaining. It makes a beautiful gourmet presentation and is a great do-ahead item because it can be served hot or cold.

 

Serves 4

 

4 6 oz pieces of halibut, or cod

3 tbl olive oil

10 unblemished outer leaves of romaine lettuce(from 2-3 heads)

1 lemon, half juice and half sliced

4 tbl minced shallot**

2 cloves minced garlic

1/2 bunch rosemary sprigs*

1/2 bunch thyme sprigs*

 

Preheat oven to 450 degrees Farenheit and coat the inside of large baking or casserole dish with olive oil. Saute minced garlic and shallot in a small skillet over medium heat, add lemon juice with the last few minutes of cooking.

 

Blanch lettuce in a large pot of boiling water for only 8 seconds then transfer lettuce to a large bowl of ice water. Drain lettuce, pat dry and cut out the ribs.

 

Spread 1 piece of lettuce out on a work surface, add another piece of lettuce to cover any holes(use 1-2 extra if neccesary). Season 1 piece of halibut with salt and pepper place in the middle of the lettuce. Spread shallot and garlic mixture over the top of the fish, top with a couple sprigs of time and rosemary. Close the lettuce by wrapping around the fish and top the wrap with a slice of lemon. Repeat 2 more times. Cover packets with wax paper then wrap the baking dish tightly with foil.

 

Bake in the middle of the over 15-20 minutes or until packets are firm to the touch.

*The entire sprig is for presentation, the leaves are edible but you do not need to eat the branch.

**Shallots are in the onion family, however, they are smaller than onions and slightly sweeter.

New favorite fish dish!

I usually don't like white fish because of it's lack of flavor.  Then I tried this new recipe and discovered how delicious and flavorful it really can be.  Thanks for this great new way to enjoy a healthy meal.
