Spring Fever: Part One
Spring is near and we have your food covered! Spring Fever is a 3 part content series with spring themed recipes by Kasey Bell, including Picnic Food, a St. Patrick's Day Bash, and an Easter Feast.
Part One: Not your ordinary picnic! Pack Chicken Salad Stuffed Pitas with Hummus and Greek Salad Kabobs for a delicious day in the sun.

Greek Salad On a Stick
Serves 4
24 grape or small cherry tomatoes
3 oz feta cheese cut into 12 1/2in cubes
12 pitted kalamata olives
1/2 red onion cut into 12 1/2in cubes
1 1/2 english cucumbers cut into 12 1/2in cubes
2 tsp lemon juice
2 tsp red wine vinegar
2 tbl extra virgin olive oil
2 tbl chopped fresh parsley salt and pepper to taste
Thread the skewers starting with 2 tomatoes, an olive, then a piece of feta cheese, a piece of onion and finish with a piece of cucumber. Repeat with the remaining ingredients. In a small bowl, mix together the lemon juice, red wine vinegar and parsley. Whisk in the olive oil until the mixture thickens. Season with salt and pepper, to taste.

Chicken Salad Stuffed Pitas
Serves 4
2 pita bread slices cut in half and pockets opened
1 boneless skinless chicken breast, cooked and diced
1/4 store bought hummus
juice of 1 lemon
1/4 cup chopped fresh parsley
1 tomato, seeded and diced
1/2 english cucumber, diced
1/4 crumbled feta cheese
1/4 red onion, thinly sliced
salt and pepper to taste
Spread 2 tbl hummus inside each pita pocket. Combine chicken, vegetables, lemon juice, feta cheese, parsley, salt and pepper. Then carefully stuff in the pita bread halves.
